January 2011 - Paris Apaches
A little more than one hundred years ago, Paris was seized by a fear of the night. In this month's Paris Insights we explore the world of the apaches, gangs of young thugs that seemed to roam the city and attack with impunity.
In this month's Le Bon Goût, we report on the fine-dining establishment Lilane, a neighborhood restaurant located near place Monge, and its Parisian chef Stéphane Guilçou. We visited the Préfecture de Police Museum to photograph a unique weapon—a combination brass knuckle, dagger, and single-shot pistol—that the apaches used to commit their crimes.
