December 2007 - The Church of Val-de-Grâce
In this month’s Paris Insights we recount the history of Val-de-Grâce, one of the most beautiful churches of Paris. Situated in an area that once lay outside the walls of the city, the church is largely overlooked by tourists.
In our restaurant review, we investigate Chez Léna et Mimile, where Chef Christèle Gendre practices food preparation techniques propounded by Hervé This, the renowned researcher in the new field of molecular gastronomy. And finally, we look at a form of music known as Gregorian chant and provide information about where to go in Paris to hear these age-old liturgical songs.
