December 2005 - Christmas on rue Mouffetard
For this month's newsletter, we decided to conduct a blind tasting to help us determine the gustatory differences between soft cheeses made in the Jura region that are processed at different temperatures. We chose three cheeses, two of which are varieties of Vacherin Mont d'Or. This cheese is sometimes referred to as the "Christmas cheese" because it is produced and achieves its maturity around the holiday season.
